Make Mauritian samosas like a pro

Do you want your stay in Mauritius to offer you opportunities to taste the local cuisine, or will the over-indulgence make you long your time away as you miss the incredible flavours? In any case, Mauritian samosas are must-try (and something you might be able to replicate back at home).
 
These pastries come from Central Asia and the Middle East and the recipes have as many variations as there are countries. You can find them with vegetables, meat, with more or less spice, cheese or not and even sweet some variants.
 
Follow this (easy) samosa recipe and carry your family and friends with it.

First step: the preparation of the dough

Firstly, it is a matter of making the dough that will be used to accommodate the filling.
 
Ingredients
  150g flour 1 pinch of salt
  20cl water Olive oil

Step 1: Knead the flour with water and salt, adding the water gradually until the dough no longer sticks. Adjust the amount of flour or water if necessary.
Step 2: Divide the dough into about ten balls of equal size, then flatten them by hand. The patties should be about 7cm in diameter. Overlay them by putting a layer of flour between each patty.
Step 3: Flatten everything with a rolling pin. The final wafer should be about 12cm in diameter (or a little less).
Step 4: Place the patty on both sides in a pan.
Step 5: Once the cake is cooked, remove the edges and separate the different leaves.

Once this step is completed, the filling must be prepared. There is more freedom with this step, you can put everything you like in it and adapt the recipe to your taste.

This step is truly unpredictable, you can put anything you like in it, as long as the mixture is seasoned. Here is a recipe for a filling made with potatoes and cheese, with spices.
 

Ingredients
  1 large potatoes  Peppers and spices (tumeric, cumin…) 1 large onion or several small green onions 
  1 clove of garlic Grated cheese  

Step 1: Cook the onion and garlic in a pan with a little olive oil. Meanwhile, steam or microwave the potato in a little water.

Step 2: In a bowl, crush all the ingredients and then add salt, pepper and spices. You can even add fresh parsley or chives to enhance the taste of the mixture.

Step 3: Then place the stuffing on a strip of dough.

The art of folding samosas

- Place the stuffing at the end of the sheet.
- Fold the shortest and closest side of the stuffing over half of the stuffing so that it forms a rectangular triangle with the rest of the leaf.
- Fold the assembly down to the side as you go so that it has a triangular shape all the way along.
- At the end, fold the remaining end inside the available space, like an envelope.

Step 4: Fry your samosas in boiling oil and place them in absorbent paper to remove excess fat.
