What's the Fried Mine?

This traditional Mauritian dish, very popular with tourists, is a dish composed of Chinese noodles sautéed and cooked in Asian spices and sauces before being garnished with meat and omelette. You will never find a unique fried mine because each Mauritian makes the recipe in his own way or varies somewhat the ingredients. As far as the meat is concerned, for example, the Mine Frit is usually garnished with chicken and shrimps but this can vary and can be replaced by other meats or with tofu if you want a vegetarian version of this succulent meal. 
Mine Frit is relatively quick and easy to make and is a hearty and cheap dish, which has made it a success in Mauritius.

To prepare a Mine Frit for 4 people, you need to..: 
About 400 grams of Chinese noodles 
2 chicken fillets cut into small pieces or strips 
250 grams of peeled shrimp
3 eggs that you will prepare into an omelette 
2 carrots 
1 small Chinese cabbage (also called pay Choy)
Olive oil or sunflower oil, depending on your preference. 
Salt and pepper to season 
Garlic 
Soy sauce with mushrooms 
Oyster sauce 
 
You can add in addition, if you wish, a small box of soy sprouts or a handful of garlic tails which are the small green stems representing the garlic leaves.
Step One: 
Marinate the initially cut chicken and shrimps in garlic and oyster sauce, and a little mushroom sauce. All this without adding salt, as the sauces are already salted.  
Wash and then cut the vegetables into small pieces. 
Beat the eggs to make omelettes, season with salt and pepper and then cut them into small strips. 
Step 2:
In a frying pan over a low heat, brown the chicken and shrimps marinated with the chosen oil, then set aside. 
Then cook the noodles in boiling water without salt.
In a wok, or in a large frying pan if you don't have a wok, brown the vegetables with a little oil and soy sauce and stir gently for a few minutes. 
Step 3:
Once the vegetables are ready, add the chicken and shrimps then the Chinese noodles with a little soy sauce. 
Taste and season to taste. 
It's ready!
